I’ve wondered several times why I don’t remember there being much to do about Easter last year. It’s because I was in the hospital, the entire weekend and then some.

There are several things on my Easter to do list. I want to make my own “peeps” In the past (even as a child) peeps are something I could take or leave…even my own kids think one is about enough. I have a feeling we will like home made ones much better..so I need to get busy and will probably attempt this tonight.

I also want to make those cute rice krispie eggs I keep seeing on the tv, with the candy inside. There are several other things on the list…including shopping and right now my car is at the shop getting the AC checked/fixed…only two windows go down on the car and it’s like an oven in there in this florida weather, without being able to put the drivers window down.

Our traditional Easter menu includes Ham, Baked Beans and our Family recipe for potato salad, plus other side dishes, appetizers and goodies. It’s less formal than our other menus, but is great food for sitting out by the pool or patio.

I almost forgot the most important thing…coloring easter eggs. Last year (since I was in the hospital) was the first year, since I was a child, or at least 19 years(since my oldest was little) that we didn’t do this. The boys are 20 and 15 now, but my 15 year old and I still love this tradition, and I do still hide them for a hunt. The difference is now I don’t elaborate so much with baskets….just a few simple pieces of their favorite candy, like a chocolate bunny and those robin egg pieces of gum, and a few bucks and it’s done.

Last year the boys brought me an easter lilly in the hospital, we transplanted it in the ground and to my amazement, I found it survived the cold winters we do get here. I forgot it was even planted there till about a month ago, when my youngest came to me and told me it had grown significantly…it’s almost like a bean stalk…it’s about the only thing that made it through the winter. It has buds…and if my feeling/gut is right it will bloom on Easter.

I would love to hear your Easter stories and traditions. Do you like peeps or not?

Changes already? I was going to follow Martha Stewarts directions for making the peeps chicks and bunnies, but after reading reviews decided it will be too frustrating to me..I’m not good with piping and having to move super fast isn’t in my vocabulary…this is not a fibromyalgia friendly recipe.  I found another recipe…and will be cutting the marshmallows into shapes with a cookie cutter…I added Marshmallow flavoring from Lorann Oils…and know this much so far…they taste yummy…much better than peeps…the mix is setting up now…for 4 hours or in this case overnight…will update tomorrow and if they come out cute…pictures will follow.

Instead of calling these peeps I’m calling them sugar bunnies…they are fun to make and taste yummy…just some of the progress pictured below

Ok…the sugar bunnies are done…my car temporarily has the AC back, they couldn’t find the leak with a scanner so  they put some kind of dye in with the freon, told me when it blows hot again to bring it back…I swear the dye is making me sick..though I can’t see it, smells odd when the ac is on.

 4/21 I still have to get the shopping done and do the majority of the things left on the list. I’m bringing (to the family gathering) a white chocolate and lemon curd cake, asparagus (will cook that on sunday) home made black bean salsa,  veggie dip and platter. Still need to do the rice krispie egg things and color dye/eggs….glad it’s only thursday…I can only work in short time quantities before I need a break…I don’t like having FMS..used to be I could do this all (and then some) in a day..on the bright side…I can still do it and if something fails there is always store bought ;)

4/21…most of the shopping is done…more changes though…mom doesn’t want the asparagus…so I’m making summer squash saute with pecans…bet it’s yummy…squash, pecans, celery, fresh basil, ham, parm. cheese, italian flavored bread crumbs, onion.

The thing I’m looking extra forward to is the black bean salsa I make..I could almost live on it : ) black beans, pineapple, mandarin oranges, peppers, cilantro, purple onion, orange juice, lime juice and a few other things.

4/23 had some last minute shopping yesterday, but couldn’t find those easter/spring m&m’s have to pick up some prescriptions later so maybe I will find them then. I  did mostly cleaning yesterday(I’m kinda fussy about wanting things “just so”)..you would think everyone is coming here, but we are going to mom and dad’s. Will probably be a smaller group than we thought. This morning Iwent to the vet and got the animals their monthly flea control…I have so much to do…got the black bean salsa done and the veggie dip. Taking a short break here to update this. Hoping my spring perfume sample set from Black Baccara comes soon and that my Easter Lilly blooms tomorrow.

Next week is gonna be busy, Jango gets fixed on monday, the next day Matt has to have the cysts on his brain scanned, we have to do that yearly, next day I have a Dr. appointment.

Over and out…going to check my lilly again and water it…wish me luck for a bloom tomorrow!

4/25 It’s the morning after Easter…Hope you all had a good one! I managed to get everything done, but at 11:30 pm on saturday when getting ready to make those egg shaped rice krispie treats….I decided it was too much work to shape them into the eggs, we don’t have any little ones around or in the family any more, so I decided it wasn’t worth all the fuss and just made regular rice krispie treats with those holiday m&m’s on top. The cake I made was outstanding…one of the best ever! White Chocolate and lemon curd…didn’t follow the recipe I posted on my fb, but something different. All in all we had a very nice time, but Mom and I put so much work into this then only to have 6 out of a potential 14 show up is rather discouraging…Mom and I both have significant health problems,  and doing this kind of work takes a toll on us, that involves lots of pain ,so I think the next time we have to tell people they need to give a definate yes or no on a certain day prior to the event…no maybes, then  no’s  ,then, yes, than maybes, then yes..only to not come. This way we can scale it down..there was at least one pie and one cake not even touched, plus lots of leftovers, which is good for myself and the boys and Mom…will save us a few nights of cooking. Dad is a great help too, he and I did all the clean up, plus he helped Mom with her stuff.

My Easter Lilly didn’t bloom : ( but I know you can’t rush nature…have to let it take it’s course and know things are going along as they should…will update with pics when I recouperate…it’s already a long morning…little cat Jango is at the vet getting fixed.

4/29…It’s been a busy week and I haven’t had time to blog, let alone get some of my easter pics up…but it’s friday, the cat is doing much better…my Wild Amazing Lilly bloomed the day after easter…I took some great pics but haven’t loaded them yet…in the mean time here are a few other pics!
